FRIED CHICKEN « A LA DIABLE”

Preparation time : 55 min

Ingredients for 4 :

– 1 whole Free-Range Challans chicken

– butter : 50 gr

– breadcrumbs : 50 gr

– salt and pepper

– 3 tablespoons of mustard

– Sauce : Butter : 100 gr, mustard : 1 tablespoon, 1 egg yolk, Cayenne pepper (optional)

Cook the whole chicken in the oven for 3/4 of an hour (180°C/….). Let it cool down for a while.

  • Cut it into 6 pieces and spread them with breadcrumbs mixed with mustard
  • Grill each side for 5 min
    • Prepare the sauce : In a saucepan on a low setting, mix the egg yolk with the mustard then add the butter. Remove from the hob and smooth the mixture. Add the Cayenne pepper

Set the chicken pieces on the plates and add the sauce
